Traditionally these chutneys are grinded in stone device called Rolu..which gives the pachadi a unique taste but we guys in cities have to compromise on the taste using electric mixers:)Usually I don't like ridge gourd but somehow I liked it in this chutney form,,Try out guys and let me know how it came out for you.
Ingredients:
- 1 or 2 medium sized ridge gourds, washed and chopped into pieces with skin
- 1 cup chopped coriander leaves
- Few curry leaves
- 4 or 5 green chillis
- 4 or 5 dry red chillis
- 2 tbsp Sesame seeds
- 2 tsp split gram dal
- 1 tsp cumin seeds
- 2 tbsp of soaked Tamarind
- 2-3 Garlic Cloves
- 1-2 tsps oil
For seasoning:
- 1/2 tsp mustard seeds
- pinch cumin seeds (optional)
- 1-2 dry red chillis
- big pinch asafoetida/inguva/hing (optional)
- few fresh curry leaves
- 1/2 tsp oil
How to make?
clean it
cut into pieces |
add ingredients and roast them without oil |
add peanuts |
Roast until all turn into brown |
addd 1/2 tbsp of oil |
now add green chillies (or at the starting u can add) and fry for 3 mins |
grind them |
now 1/2 tbsp of oil |
add ridge gourd pieces |
Add soaked tamarind and grind it |
For seasoning |
